A quick yet delicious recipe with prepared with minimal fuss and very little prep time! With my kitchen currently undergoing a complete makeover, I wanted serve a freshly cooked home meal using available ingredients in my fridge/freezer. This one is also perfect my my uni-going daughter to whip up with ease so this one’s for you Mariya❤️

Ingredients
- 500g Quorn Chicken Pieces
- 4 tbsp oil
- 3 spring onions, finely chopped
- 1 green pepper & 1 red pepper, sliced
- 3 cloves garlic, finely sliced
- 1 tsp curry powder
- 1/2 tsp chilli powder (optional)
- 1/2 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1 tsp salt or to taste
- 1 tbsp tomato puree
- Fresh coriander leaves for garnishing (optional)
Method
- Heat the oil and saute the onions and garlic for 3-4 mins.
- Stir in the dry spiced and continue to saute for another minute.
- Mix in the tomato puree and then add in the Quorn pieces with the peppers.
- Garnish with coriander if using.
